The Seasons - Four Recipes Feature

It was a joy to be asked to create recipes for this feature in this latest edition of Eat Drink Mornington Peninsula. The Peninsula produces some of the highest quality ingredients relished all over Victoria and Australia.

Sashimi of Hiramasa Kingfish, pickled wombok, lemonade fruit puree and fermented chilli.

The fish is dressed in a white soy dressing, pickled wombok stem ribbons placed on top with dots of lemonade fruit puree. The dish is garnished with local flowers some foraged and others grown by Alex at Norwood Farm. The dish is finished with a fermented chilli (yuzu kosho) snow.
